Desmond is a difficult nation to play as, because as soon as England has recovered 60% of its manpower, it will gain claims on all of Ireland. This will usually happen after the initial surrender of Maine and war with France and after the War of the Roses.
Initially there are two different choices. Try to stay in Ireland or try to flee to the new world. If you plan on staying in Ireland, prioritize annexing as many Irish provinces as possible and choose military ideas. If you plan to flee to the new world, take colonization ideas, discover America, and colonize less than five provinces in a colonial region. This is very important, as otherwise, it will form a Colonial Nation.
Another excellent strategy is to go inside the Holy Roman Empire by attacking East Frisia on December 11 without a casus belli. You will be able to core East Frisia, then move your capital there. Once you have done that, improve relations with the emperor so that you can join the Empire. You can also take a province in the HRE, vassalize East Frisia, then lose Cork on purpose to force your way into the HRE. One of the massive upsides of these strategies is that East Frisia is in the English Channel, and by conquering towards the Low Countries you will get excellent development. If you choose to play that way, you should try as much as you can to ally France, or another big nation. Allying the Holy Roman Emperor deserves a mention, as it will prevent you from getting Unlawful Territory requests.
